We love cookies in this house.  We make them at least once a week and they usually don’t last long.  Ever since Addie went gluten free though we have had a hard time coming up with a good cookie recipe.  We didn’t really have a go to recipe, but now we do.  The no flour peanut butter cookies have become one of our favorite cookies to make and they are so easy to make.  The recipe is so easy to remember too since everything is 1.



1 cup creamy peanut butter

1 cup sugar (extra sugar for rolling the dough in)

1 egg

1 tsp baking powder

1 tsp vanilla

Preheat the oven to 350 degrees.  In a bowl mix the peanut butter and sugar together.  Make sure it is all mixed together well then add in the egg, baking powder, and vanilla.  Put the extra sugar in a small bowl for rolling the balls of dough in.  Take a tsp or so of dough and roll it in a ball and then roll the ball around in the sugar.  When it is coated put dough on your cookie sheet and flatten with a fork.  You will bake the cookies for about 10 minutes.  Let them cool on the cookie sheet for 5 minutes and then move off the sheet.


For a fun variation we have also added 1 cup chocolate chips.  The only difference is we do not roll them in sugar and instead of using a fork to press down we just use the palm of our hand to press them down a little bit.  I think we make these cookies now more than any other cookie now.   So tasty!
