These homemade fish sticks are so good. Frozen store bought fish sticks are so bland compared to these. At least I think so now that I have been making homemade. I made these for lunch today and I kid you not the kids had three helpings of these fish sticks. I made a lot extra to freeze and have on hand for another lunch and I’m so glad I did. I didn’t think to take pictures of the whole process of making or to share this recipe til I was done.
I used tilapia for these fish sticks. I prefer it over other fish so that is just what I had on hand, but I’m sure you can use any white fish. For the outside breading I used corn flakes that I pulverized in the blender. The corn flakes give it that nice crunch when you bite into it. I’m really bad about measuring things out and so I don’t have the measurements for the amount of flour, corn flakes, and seasoning so I apologize before hand.
Recipe:
5-6 Tilapia fillets thawed (the ones I used were in a package of 5, but we had one left over from dinner last week)
Flour
3 Eggs
Corn flakes that have been pulverized in the blender
Favorite all purpose seasoning (we like to use Riley’s)
What you are going to do is put the flour, eggs (all scrambled up), and corn flakes with seasoning all in their own bowls. Cut the fillets into strips and first place them in the flour, then egg, and last the corn flakes making sure they are completely covered by each one every time. Place on an ungreased baking sheet. You will bake 450 degrees for 10 minutes on one side and then rotate each fish stick and place back in the oven for five minutes. If they need to bake longer that is fine. You want the outside to be browned and crisp.
You can enjoy and eat right away or you can let them cool and then place them in a gallon freezer bag and placed in the freezer to enjoy later.
